Morning arrival in Hanoi and transfer to the Silk Path Hotel for a 3-night stay. Afternoon cyclo tour of Hanoi’s old quarter. Travel through the maze of narrow streets where women in distinctive conical hats sell steaming bowls of pho and wispy bearded men still play mahjong. Dinner this evening will be at a local restaurant such as Le Tonkin. (D)
Morning tour of Hanoi. See the Opera House, Hoan Kiem Lake, Quan Temple and the Temple of Literature. Later join a street food tour. Visit Cho Hom market, one of the largest markets in the city. Here you will be greeted with a colourful array of fruit and vegetables, sweets and colourful temple offerings. Try some fresh spring rolls and a papaya salad accompanied with a refreshing glass of tea. (B)
This morning join a local chef and visit a neighbourhood market. Learn about typical seasonal vegetables and other produce and then purchase ingredients for your cookery class at the Hanoi Cooking Centre. Later, under the supervision of local chefs, prepare classic dishes from northern Vietnam. At lunchtime enjoy what you have cooked with a local beer or a glass of wine. Balance of the day is at leisure. Why not take a stroll through the elegant tree-lined boulevards of the French Quarter or return to the Old Quarter? Leave Hanoi this morning for the drive through green paddies to the world heritage site of Halong Bay. Board a traditional junk operated by Huong Hai Sealife for
an overnight cruise through the dramatic limestone peaks. This afternoon, sail through splendid Bai Tu Long bay. Stop at working fishing villages and, if you wish, take the opportunity for a swim. (B, L, D)
This morning cruise around the splendid limestone mountain islands and stop to explore Sung Sot cave. After disembarkation later this morning return to Hanoi for the flight to Danang. On arrival transfer to Hoi An for a 3-night stay at the Ancient House Village. (B)
Morning cruise to Kim Bong Village. Visit a traditional shipbuilding yard and cycle through the village with stops at typical colonial houses, temples and local cottage industries. Visit a farm and learn more about traditional gardening methods. The tour concludes with local tam huu spring rolls and a traditional herbal footbath. An afternoon walking tour of Hoi An will introduce you to highlights of this charming town. Visit the old merchant’s house with Chinese, Japanese and Vietnamese influenced architecture and stop to admire the 400-year-old Japanese Covered Bridge, an iconic symbol of Hoi An. The tour also includes the Assembly Hall of the Chaozhou Chinese Congregation. Dinner this evening is at Brother’s Café. (B, L, D).
Meet with your cooking teacher and travel by boat to Baked Pot Market, dating back more than 300 years. With your teacher and guide, walk through the village and market and learn how to select fresh produce and ingredients. Then return to the hotel for a cookery class and an introduction to the cuisine of central Vietnam. This will be followed by lunch. Balance of the day is at leisure. Maybe shop for silk and embroidery or have something made by one of the many tailors in town. Make sure you have time to stop for a refreshing sugar cane juice or a local beer at a riverfront cafe. Drive to Danang for the onward flight to Ho Chi Minh City (Saigon) and a 3-night stay at the Renaissance Riverside Hotel. On arrival take a city tour of Ho Chi Minh City. Visit the Reunification Palace, Notre Dame Cathedral, the gothic Central Post Office and Chinatown. The tour also includes a visit to Binh Tay Market where everything from broomsticks to bananas is for sale. Dinner this evening will be amid the colonial surroundings of the Ly Café. (B, D)
This morning, join Ms Cam Van, a talented local chef. Start the day with a visit to a local market. Learn about and taste some of the ingredients used in the cuisine of southern Vietnam and observe the buying and selling rituals of the locals. A hands-on cooking lesson will follow in the relaxed surroundings of Ms Cam Van’s cosy home and a lunch of what you have all prepared together will follow. Afternoon at leisure. Take the opportunity to visit the fascinating Cu Chi Tunnels. Alternatively take a stroll down the former Rue Catinat, now Ho Chi Minh City’s premier shopping street, for glimpses of a former colonial era. Ho Chi Minh City still retains its joie-de-vivre; baguettes filled with paté are sold on nearly every street corner, but for the truly Vietnamese version try bahn mi. (B, L)
Leave the city for the drive to Ben Tre and a cruise on the mighty Mekong. Visit a coconut processing plant, taste local fruits and take a stroll through a typical Mekong village. Transfer to a sampan and travel along the canals for lunch at a local home. There will be time for a walk or cycle ride before you return to Ho Chi Minh City. Balance of the day at leisure. (B, L)
