A beloved tradition of gastronomic societies still continues where family and friends are gathered into a culture of food and ultra-modern kitchens produce novel wonders in molecular gastronomy. And though the Basque country features two of the 10 best restaurants in the world, perhaps San Sebastián's appeal comes just as much from the age-old local markets and time-honoured delicacies, the ambience of the pintxo bars and the roll of a txakoli on the tongue while overlooking the beach at sunset.

Fly from London Heathrow to Bilbao. On arrival, transfer to San Sebastián for a 3-night stay at the Hotel Codina. San Sebastián has the highest concentration of Michelin stars, per capita, of any city in the world. However, there are many other dining options to choose from and pintxos (Basque tapas) are an ideal introduction to Basque cuisine. An evening tour of the famed Parte Vieja (old town) will ensure you taste the very best and most exciting. Delve into the culinary heart of the city and experience a night of eating and drinking. From classical traditional haunts to chic new bars, the pintxo hunt always features a mix of bites. Wild caught squid, freshly caught prawns and pork tenderloin could all be on the menu. Meet your guide this morning for a guided walk around La Bretxa market and discover a treasure trove of culinary gems. Huge hams dangle above plump sausages and the fish counters glisten with piles of anchovies, bream, hake and tuna. Lobsters, prawns, crabs and clams are always plentiful and the temperate climate and lush landscape of the Basque country provides a wide range of fruit and vegetables. Visit some of the finest green grocers, butchers and fishmongers in the world and then learn to cook like a San Sebastián native with a culinary instructor. Morning and afternoon at leisure in San Sebastián. Perhaps return to the delicatessens and artisan food shops near La Bretxa market. Here, you will find regional specialities such as aged sheep's cheeses, membrillo (quince paste) and superb seasonal mushrooms. Alternatively, an optional visit can be arranged to the beautiful Basque coastline with visits to a txakoli winery and the fishing village of Getaria, famed for its fresh seafood. This evening, join your guide for a Spanish wine tasting. Taste eight wines chosen by Andrew Halliwell, an expert who has made wine across Spain and five continents.
