A Mauritian MasterChef Shelina Permalloo

The 2012 MasterChef winner, Shelina Permalloo, was renowned for her ‘sunshine on a plate’ dishes, inspired by her Mauritian heritage. Beginning in March 2013, Shelina will partner with the beautifully luxurious Mauritian owned Maradiva Villas Resort & Spa to run a series of three-day cooking schools.

To celebrate, Maradiva organised a private Mauritian-themed dinner in London with a group of tour operators, joined by Shelina, who created a new dessert for the evening. Cox & Kings’ PR executive, Katie Parsons, joined the evening with the ‘Tropical Tapioca’ dessert being a definite favourite.

Mauritius’ location in the Indian Ocean, at the heart of the spice route, has given the national cuisine a distinctive flavour. Using a wide array of spices, from traditional African jerk seasoning to Indian saffron and turmeric, as well as her mother’s recipes, Shelina will teach the art of Mauritian cooking. Shelina will take guests to the food market in Port Louis, selecting fresh local ingredients, before returning to the hotel to pick fruits, vegetables, herbs and spices from the hotel’s organic gardens and then cook some of her favourite recipes. Guests will leave with recipes cards, full of her tips, ideal for recreating the dishes at home.
